Coconut Oil Banana Bread

  • ⅓ cup melted coconut oil 
  • ½ cup honey (you can also use maple syrup)

  • 1 1/2 teaspoons vanilla extract

  • 2 eggs

  • 1 cup mashed ripe bananas (about 2 ½ medium or 2 large bananas)

  • ¼ cup almond milk

  • 1 teaspoon baking soda 

  • ½ teaspoon salt

  • ½ teaspoon ground cinnamon

  • 1 cup all-purpose flour

  • ¾ cups whole wheat flour

  • Options: You can try mixing in ½ cup of walnuts, chocolate chips, or dried fruit to change it up.


  1. Preheat oven to 325F. Grease a 9×5 loaf pan with cooking spray.

  2. In a large bowl, wisk the coconut oil, honey, and vanilla together together. Add the eggs and beat well. Whisk in the mashed bananas and milk.

  3. In a separate bowl, wisk together the flours, baking soda, salt and cinnamon. Then add the dry ingredients to the wet ingredients and mix together until combined. Don’t over mix! Some lumps are okay. If you're adding nuts, chocolate chips, or dried fruit, gently fold them in at this point.

  4. Pour the batter into the pan and smooth top over with a spoon.

  5. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. Cool bread on a wire rack before serving. Enjoy!
